Our very first time at Groundswell GalvestonFarmers Market was an absolute success, and we are still smiling over it!

It was SO much fun watching everyone play Build a Bag and y’all came up with some seriously interesting combinations! 😂 We loved seeing the creativity and, more importantly, getting to share what a Meal in a Bag really means to the families we serve.

💛 Thankful Thursday 💛

When I first had the idea to create Shelf Stable Meals in a Bag, I knew there was a need in our community but I wasn’t sure how to get these meals into the hands of the families who needed them most.

Then I met Erin Stubbs

To simply call her the PTO President of Burnet Elementary doesn’t even begin to describe who she is. Erin is the heart and soul of that school, pouring herself into the students, the staff, and the families with a love and dedication that is truly something special.

When we met, the government had just paused the food assistance program, and Erin was already on a mission to make sure the kids at Burnet had access to much needed meals. We quickly realized that together, we could make something happen.

That idea, combined with her heart and determination to make sure the need was met, is how Keeping Galveston Fed was born.

While we were busy creating recipes, building Meal in a Bag kits, and rallying our community to help, Erin was working behind the scenes with the school staff to identify the families we could best serve. And many times, she was the one delivering those meals directly to families.

This post could honestly become a novel, but today I want to put the spotlight on someone who would never put the spotlight on herself.

Erin, thank you for believing in this idea, for opening the door to Burnet, for helping us understand the need, and most importantly, for caring so deeply about the families in your school.

And as if everything you do for your Burnet family isn’t enough, you’re also an incredible mom who fiercely advocates for your children and one of the coolest people I know.

Today, Keeping Galveston Fed is thankful for YOU.

Sometimes the universe puts the right people in your path at exactly the right time. I truly believe Erin was one of those people.

Thank you, Erin, for helping us turn an idea into something that is feeding Galveston… one meal at a time. 🥰

💛 Jueves de Agradecimiento 💛

Cuando tuve por primera vez la idea de crear Comidas No Perecederas en una Bolsa, sabía que había una necesidad en nuestra comunidad, pero no estaba segura de cómo hacer llegar estas comidas a las familias que más las necesitaban.

Entonces conocí a Erin Stubbs.

Llamarla simplemente la presidenta de la PTO de Burnet Elementary ni siquiera comienza a describir quién es ella. Erin es el corazón y el alma de esa escuela, entregándose por completo a los estudiantes, al personal y a las familias, con un amor y una dedicación que realmente son algo especial.

Cuando nos conocimos, el gobierno acababa de suspender el programa de asistencia alimentaria, y Erin ya estaba decidida a asegurarse de que los niños de Burnet tuvieran acceso a las comidas que tanto necesitaban. Rápidamente nos dimos cuenta de que juntas podíamos hacer algo.

Esa idea, combinada con su corazón y su determinación de asegurarse de que la necesidad fuera atendida, fue como nació Keeping Galveston Fed. ❤️

Y como si todo lo que haces por tu familia de Burnet no fuera suficiente, también eres una mamá increíble que defiende con todo su corazón a sus hijos y una de las personas más geniales que conozco. ❤️

Soup Isn’t Just for Soup!

Did you know canned soup can be a secret weapon when you’re trying to stretch your grocery budget?

Cream based soups like cream of chicken, cream of mushroom, or cream of celery can add flavor, moisture, and creaminess to so many shelf stable meals.

Here are a few easy ways to use them:

🍗 Creamy Chicken & Rice
Combine canned chicken, cream of chicken soup and shelf-stable rice. Add canned vegetables if you have them!

🍝 Creamy Chicken Pasta
Mix canned chicken, cream of chicken soup and shelf-stable pasta. Add canned peas, carrots or corn for a complete meal.

🥕 Creamy Vegetable Casserole
Combine canned vegetables with cream of mushroom or cream of celery soup and serve over rice or pasta.

🌮 Creamy Taco Rice
Add a little cream soup to seasoned canned beans, canned chicken and rice to turn simple pantry ingredients into a filling meal.

Shelf stable doesn’t have to mean boring. With a few simple ingredients and a little creativity, you can turn pantry staples into a warm, filling meal for your family.

Monday Menu Day ❤️

Every Monday, we’ll share the Meal in a Bag we’re working on that week and today’s meal is One Pot Chili & Black Bean Tacos.

This meal comes in at just $9.27 per family, keeping us just under our $10 budget.

When Keeping Galveston Fed was formed last November, we started with 25 families we knew could benefit from these meals. Before long, we were serving 30 families.

Now, in just Week 2 of Back to School, we’re learning that the need is so much greater this year.

My heart aches knowing that we currently have families on a waiting list.

Waiting for a meal.
Waiting for the relief of knowing there will be something to put on the table.
Waiting for the comfort of not having to worry about what they’re going to feed their family.

We’re now planning for 37 families and that number is expected to rise.

When KGF was formed last November, someone told me there was absolutely no way we would be able to feed 25 families every week.

And now, as we approach our 1,000th Meal in a Bag in September, I am overwhelmed with gratitude for this community that has come together to make this mission possible.💕

Every week, we create a budget-friendly recipe and our incredible community helps us make it happen. We work hard to keep every Meal in a Bag Kit at $10 or less, because we want every dollar donated to reach as many families as possible.

But this is about more than a bag of groceries.

It’s about a child sitting at the table with their family.
It’s about cooking together, laughing together, and sharing a meal.
It’s about reminding a family that their community cares about them.

Because dignity matters.
Because family time matters.
Because no family should feel like they’re facing things alone.

Día del Menú del Lunes ❤️

Cada lunes compartiremos la Comida en una Bolsa (Meal in a Bag) en la que estaremos trabajando esa semana, y la comida de hoy es Tacos de Chili y Frijoles Negros en una Sola Olla (One Pot Chili & Black Bean Tacos).

Esta comida cuesta solo $9.27 por familia, manteniéndonos justo por debajo de nuestro presupuesto de $10.

Cuando se creó Keeping Galveston Fed en noviembre pasado, comenzamos con 25 familias que sabíamos que podían beneficiarse de estas comidas. Poco después, comenzamos a servir a 30 familias.

Ahora, apenas en la segunda semana del regreso a clases, estamos descubriendo que la necesidad es mucho mayor este año.

Me parte el corazón saber que actualmente tenemos familias en una lista de espera.

Esperando una comida.
Esperando el alivio de saber que habrá algo que poner sobre la mesa.
Esperando la tranquilidad de no tener que preocuparse por qué van a darles de comer a sus familias.

Ahora estamos preparándonos para 37 familias, y se espera que ese número aumente.

Cuando KGF se creó el pasado noviembre, alguien me dijo que no había manera de que pudiéramos alimentar a 25 familias cada semana.

Y ahora, mientras nos acercamos a nuestra Comida en una Bolsa número 1,000 en septiembre, estoy profundamente agradecida por esta comunidad que se ha unido para hacer posible esta misión. 💕

Cada semana creamos una receta económica y nuestra increíble comunidad nos ayuda a hacerla realidad. Trabajamos arduamente para mantener cada paquete de Comida en una Bolsa en $10 o menos, porque queremos que cada dólar donado llegue a tantas familias como sea posible.

Pero esto es mucho más que una bolsa de alimentos.

Se trata de un niño sentado a la mesa con su familia.
Se trata de cocinar juntos, reír juntos y compartir una comida.

Fueled by the generosity of our community, Keeping Galveston Fed is a grassroots initiative feeding families at local schools with dignity, one meal at a time.

What We Do
Every week, we create a simple, budget-friendly recipes using only shelf stable ingredients then build a wishlist with all the ingredients. Our incredible community then helps make it happen! We work hard to ensure every "Meal in a Bag" costs $10 or less to assemble, allowing every donation to stretch as far as possible to help more families.
Our goal is to give families the opportunity to cook together, laugh together, and sit down to enjoy a meal together.
Because dignity matters.
Because family time matters.
Because sometimes one shared meal can remind a family that they’re not alone.

Happy Saturday!

Saturdays are recipe days here at Keeping Galveston Fed! Each Saturday, we share the recipe for the Meal in a Bag we collected donations for during the week.

These meals are designed to help stretch your grocery budget without sacrificing a good, filling meal.

This week’s recipe is our take on KFC’s Famous Bowl — a Loaded Mashed Potato Bowl made entirely with shelf-stable ingredients. The best part? It can feed a family of 4–6 people for just $7.84!

And with this Texas heat, this one is especially great because everything can be prepared right on the stovetop. No need to heat up your kitchen with the oven!

A huge thank you to everyone who helped make this week’s meal possible. We are only on week two and my heart is so full. I’m so happy to see so many people come together with a common goal of feeding families with dignity!

¡Los sábados son días de recetas aquí en Keeping Galveston Fed! Cada sábado compartimos la receta de la Comida en una Bolsa (Meal in a Bag) para la que estuvimos recolectando donaciones durante la semana.

Estas comidas están diseñadas para ayudar a que tu presupuesto para el supermercado rinda más, sin sacrificar una comida rica, abundante y satisfactoria.

La receta de esta semana es nuestra versión del Famous Bowl de KFC: un Tazón de Puré de Papas Cargado, preparado completamente con ingredientes que no necesitan refrigeración. ¿Lo mejor? ¡Puede alimentar a una familia de 4 a 6 personas por solo $7.84!
