Ingredients📍
For the Salmon:
1 (4-ounce) salmon fillet
½ teaspoon dried oregano
Salt and freshly ground black pepper, to taste
For the Salad📍
2 cups chopped romaine lettuce
¼ cup quartered cherry tomatoes
¼ cup sliced cucumber
2 tablespoons thinly sliced red onion
2 tablespoons halved Kalamata olives
2 tablespoons crumbled feta cheese
1 tablespoon chopped fresh dill (optional)
For the Dressing📍
1 tablespoon olive oil
1 tablespoon red wine vinegar
½ teaspoon Dijon mustard
¼ teaspoon dried oregano
Salt and freshly ground black pepper, to taste
Instructions📍
Prepare the Salmon:
Preheat your oven to 375°F (190°C).
Place the salmon fillet on a baking sheet lined with parchment paper.
Season with dried oregano, salt, and pepper.
Bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Assemble the Salad:
In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.
If using, sprinkle with chopped fresh dill.
Prepare the Dressing:
In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and pepper until well combined.
Combine and Serve:
Place the baked salmon on top of the salad.
Drizzle with the prepared dressing.
Serve immediately and enjoy!
