This was such a delicious meal!😍 Which can also be swapped with chicken! Interested in eating something like this? Read the recipe below to find out how.

Ingredients📍

For the Salmon:

1 (4-ounce) salmon fillet

½ teaspoon dried oregano

Salt and freshly ground black pepper, to taste​

For the Salad📍

2 cups chopped romaine lettuce

¼ cup quartered cherry tomatoes

¼ cup sliced cucumber

2 tablespoons thinly sliced red onion

2 tablespoons halved Kalamata olives

2 tablespoons crumbled feta cheese

1 tablespoon chopped fresh dill (optional)​

For the Dressing📍

1 tablespoon olive oil

1 tablespoon red wine vinegar

½ teaspoon Dijon mustard

¼ teaspoon dried oregano

Salt and freshly ground black pepper, to taste​

Instructions📍

Prepare the Salmon:

Preheat your oven to 375°F (190°C).

Place the salmon fillet on a baking sheet lined with parchment paper.

Season with dried oregano, salt, and pepper.

Bake for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.​

Assemble the Salad:

In a large bowl, combine the romaine lettuce, cherry tomatoes, cucumber, red onion, Kalamata olives, and feta cheese.

If using, sprinkle with chopped fresh dill.​

Prepare the Dressing:

In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, dried oregano, salt, and pepper until well combined.​

Combine and Serve:

Place the baked salmon on top of the salad.

Drizzle with the prepared dressing.

Serve immediately and enjoy!​

Ingredients📌
Strawberry-rhubarb sauce

1 pound strawberries, hulled and sliced into bite-sized pieces
1 pound rhubarb (about 4 stalks), cut into ¼-inch wide slices
⅓ cup honey
1 small lemon, juiced

Parfait ingredients📌
1 batch of homemade honey almond granola, or several cups of store-bought granola (nut free if desired)
32 ounces plain yogurt (Greek yogurt/vanilla yogurt works, too)

Instructions📌

Preheat the oven to 350 degrees Fahrenheit. Line a rimmed baking sheet with parchment paper.
On the baking sheet, toss the strawberry and rhubarb with the honey and spread the fruit into a single layer. Bake for about 20 to 25 minutes, tossing halfway, until fruit is tender and juicy. Watch the fruit on the edges of the pan, as the honey can burn quickly.
Transfer the fruit and the juices to a bowl. Stir in the lemon juice. Serve warm over ice cream or cheesecake or let it cool and swirl it into a milkshake, etc.
If you want to make parfaits: in small glasses or bowls, layer yogurt, strawberry-rhubarb sauce and granola to your liking.

Ingredients📌

Boneless chicken breasts: Skinless, boneless chicken breasts are lean and cook quickly.

Black beans: Canned black beans are such a good staple to keep in the pantry. Make sure to rinse them well before adding them to the skillet. If you’re not a fan of black beans, you can use pinto or kidney beans.

Corn: While this is a frozen corn recipe, you can also make it with canned corn or kernels sliced from cooked corn on the cob.

Salsa: Any salsa will work well here, whether chunky or thin, spicy, medium or mild, or even restaurant-style salsa roja. You can always add a little more salsa if you like your dishes extra saucy.

Brown rice: Cook the brown rice beforehand and keep it warm so it’s ready to serve with the chicken and sauce. Long grain varieties have a lengthy cooking time, so don’t hesitate to use instant brown rice.

Oil: You only need a little oil for the skillet to cook the chicken.

Spices: Chili powder and cumin give this chicken, rice and beans dish its southwestern flavor. Salt and pepper are added, too; taste the dish once it’s cooked and add another dash of these if needed.

Cilantro: Chopped cilantro is an optional garnish to sprinkle over the finished dish. For cilantro recipe lovers, this finishing touch adds a fresh and distinct flavor. (Cilantro haters should feel free to skip it!)

Instructions📌

Step 1: Season and brown the chicken

In a small bowl, mix the chili powder, cumin, black pepper and salt. Spinkle the spice mix over both sides of the trimmed chicken breasts. Heat the oil in a large nonstick skillet set over medium heat. Add the chicken breasts to the pan and brown them on both sides.

Step 2: Add the beans and corn

Pour the black beans, frozen corn and salsa into the skillet, spreading them evenly around the chicken. Cover the pan and cook everything for 10 to 15 minutes or until a thermometer inserted in chicken reads 165°F on a meat thermometer inserted at the thickest parts.

Step 3: Serve

Spoon hot, cooked brown rice onto plates or into shallow bowls. Serve the chicken and sauce over the rice, and, optionally, garnish the dishes with chopped cilantro.

Ingredients📌
Mejool Dates (Just make sure to remove the pit first)
Peanut Butter (Choose a natural peanut butter with no added sugar)
Dark Chocolate (You can use chocolate chips or a bar. Dairy-free chocolate is also fine)

Instructions📌
Stuff the dates: Cut a vertical slit in each date and remove the pits. Put a half tablespoon of peanut butter in each one.

Microwave the chocolate in a small bowl in 20-second intervals, stirring in between, until melted. You can also melt it using a double broiler–Place a heatproof bowl over a pot of simmering water, ensuring the water doesn’t touch the bowl. Add the chocolate to the bowl and stir until melted.

Cover the Dates in Chocolate: Using 2 forks or chopsticks, dip the dates into the chocolate, leaving the peanut butter visible. Place on a parchment- lined sheet pan and repeat with the remaining dates. Refrigerate until the chocolate hardens.

This was the perfect meal to recover from the gym!💪

Ingredients📌

1 boneless, skinless chicken breast
1 tablespoon olive oil
Juice of half a lemon
1 garlic clove, minced
1 teaspoon fresh thyme leaves
Salt and pepper to taste

Instructions📌

In a small bowl, mix together the olive oil, lemon juice, minced garlic, and thyme leaves.
Season the chicken breast with salt and pepper, then marinate it in the mixture for at least 15 minutes.
Preheat a grill or grill pan over medium heat.
Grill the chicken for 6-7 minutes on each side, or until fully cooked.
Let the chicken rest for a few minutes before slicing and serving.

1 frozen hash brown patty
1 large egg
1 slice of cheddar cheese
1 whole-grain English muffin, split and toasted
Salt and pepper to taste

📌Instructions:

1. Cook the hash brown patty according to the package instructions until crispy.
2. Meanwhile, cook the egg to your preference (fried, scrambled, or poached), seasoning with salt and pepper.
3. Place the cooked hash brown on the bottom half of the toasted English muffin.
4. Top with the egg and slice of cheddar cheese.
5. Cover with the top half of the English muffin to form a sandwich.

1 (5.3-oz.) container low-fat vanilla strained (Greek-style) yogurt

2 teaspoons natural peanut butter

1 tablespoon dark chocolate chips

1/2 teaspoon coconut oil

Chopped unsalted peanuts for garnish (optional)

Flaky sea salt for garnish (optional)

📌Instructions:
1. Mix yogurt and peanut butter together in the yogurt container or a small bowl.

2. Combine chocolate chips and coconut oil in a small microwave-safe bowl. Microwave on High in 15-second intervals, stirring after each, until the chocolate is melted and smooth (about 45 to 60 seconds total). Pour over the yogurt mixture and spread evenly to cover. Here is the recipe to make it yourself!

Ingredients:

1 can (15 oz) chickpeas, drained and rinsed
2 tablespoons plain Greek yogurt or mashed avocado
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/4 teaspoon garlic powder
Salt and pepper, to taste
2 slices whole-grain bread
Fresh lettuce leaves
Sliced tomatoes
Sliced cucumber
Optional: fresh herbs like parsley or dill
Instructions:

In a bowl, mash the chickpeas with a fork until mostly mashed but still chunky.
Add the Greek yogurt (or avocado), Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix until well combined.
Place lettuce leaves on one slice of bread.
Spread the chickpea mixture generously over the lettuce.
Layer with sliced tomatoes and cucumbers.
Top with the second slice of bread.
Serve immediately or wrap it up for later.

Here’s the recipe down below to make it yourself!!

Ingredients:

4 ounces of pasta (such as spaghetti or penne)
1 cup of broccoli florets
2 cloves garlic, minced
1 tablespoon olive oil
1/4 teaspoon red pepper flakes (optional)
1/4 cup grated Parmesan cheese
Salt and freshly ground black pepper, to taste
1 tablespoon fresh lemon juice (optional)

Instructions:

Cook the Pasta: Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente.

Add Broccoli: About 3 minutes before the pasta is done, add the broccoli florets to the boiling water with the pasta. Continue cooking until both the pasta and broccoli are tender.

Sauté Garlic: While the pasta and broccoli are cooking, heat the olive oil in a large skillet over medium heat. Add the minced garlic and red pepper flakes (if using), sautéing for about 1 minute until fragrant.

Combine: Drain the pasta and broccoli, reserving about 1/2 cup of the cooking water. Add the drained pasta and broccoli to the skillet with the garlic. Toss to combine, adding reserved pasta water as needed to create a light sauce.

Finish: Remove from heat and stir in the grated Parmesan cheese. Season with salt and freshly ground black pepper to taste. For added brightness, drizzle with fresh lemon juice.

1 banana

1 cup strawberries

1/2 cup vanilla yogurt

1/2 cup milk

2 teaspoons honey

Pinch of ground cinnamon

Instructions:

Blend the banana, strawberries, yogurt, milk, honey, cinnamon and 1 cup ice in a blender until smooth. Pour into a glass and ENJOY!!

Feeling great after making and eating this amazing breakfast!😍

Here's the recipe to make a delicious breakfast for yourself too!

Ingredients
For the syrup:

2 tablespoons fresh lemon juice
4 teaspoons honey

For the waffles:

1 scoop vanilla protein powder
2 teaspoons coconut flour
2 teaspoons coconut sugar
1/2 teaspoons baking powder
Pinch of salt
1 large egg
3-5 tablespoons unsweetened vanilla almond milk
1 zest of 1 lemon
2 tablespoons fresh blueberries lightly heaping

Instructions:

Whisk together the lemon juice and honey in a medium, microwave-safe bowl until well combined. Microwave until the mixture is reduced by about half, darkens in color, and begins to stop bubbling, about 2-2 1/2 minutes. Watch closely while it microwaves, if you overcook it, you will have hard taffy, not syrup. Place in the refrigerator to chill and thicken while you make the waffles.
Rub a waffle iron with coconut oil and heat on the highest setting.

In a small bowl whisk the protein powder, coconut flour, coconut sugar, baking powder, and salt.
Lightly whisk the egg and add it in, along with the milk and lemon zest, and whisk until smooth. Adjust the milk accordingly (see FAQs).
Spoon the batter into the middle of the waffle iron, spreading out only slightly, and cook until golden brown and crispy. Repeat with remaining batter.
Drizzle with the thickened lemon syrup and DEVOUR!
