I was raised to know this recipe as HoeCake. It’s actually a huge biscuit and my Grandmother made it often.
(Borrowed)
This bread may be a little lost on this generation, but my Paw Paw taught me how to make pone bread before he passed. It’s the same ingredients you would use to make biscuits, but patted out into a circle flat. I usually make it from the extra dough I have when making chicken and dumplings.
Anyways, I’ve seen some people call it a hoe cake, but the hoe cakes I’m familiar with have cornmeal. Does anyone else make pone bread?
My Grandfather never really measured ingredients. He would use what he called ā€œKentucky windageā€ when cooking.
He would mix Martha White’s self rising flour, about a tablespoon of Wesson oil, and a cup of buttermilk for a wet dough. It’s the same mixture he used for biscuits and dumplings. You can add more flour or more milk to get the right consistency.
He would then grease a cast iron skillet or a flat pan and pat the dough into a circle. The grease was either butter or bacon grease if we had it. He would also brush some melted butter on top. Then he would set the oven at 350 and once it was preheated, he would bake it for about 20-25 mins or until it was golden brown.

Tomato gravey cooked in cast iron skillet. First cooked bacon in the skillet & then used the grease to make the gravey. ** I just can not believe all the comments on this simple meal. Its a Southern thing.** Recipe added: cook your bacon, then pour off all bacon grease till just the bottom of skillet is covered. Lower heat to med-low. Sprinkle 3-4 Tablespoons of Self Rising flour on top & stir, stir, stir. Stir till light brown. When brown as you want it to be add 1/2C water & stir like crazy till well combined. When well combined, add 1 can of diced tomatoes, salt, & pepper. Stir till well combined. Turn heat off & enjoy.(Some people add milk instead of water. It is NOT a sauce & NOT Spaghetti sauce & NOT for pasta. It's for biscuits, toast, rice, &/or taters. Many people eat it for breakfast.)

Whatever dry beans I have left over after opening a bag I will mix them. I had some pinto beans and Great Northern beans mixed. I decided to clean/rinse/soak them overnight.
3 ham hocks cleaned and start to cook in no salt chicken stock
1 1/2 hours cooking time
Beans rinsed again in cold water
Beans are ready for the pot
In goes a nice medium slab of salt fat back
Cook slow another 2 hrs or to your desired consistency.
Pepper
Smoked paprika
Garlic powder
Onion powder
Season to your liking
This bowl is just my size. Slice some onions throw in some pepper flakes all done.
No extra salt used. The fatback slab will be enough salt. Y’all stay country😊
