Western North Carolina Culinary Association of the ACF The Culinarian's Code

I pledge my professional knowledge and skill to the advancement of our profession and to pass it on to those that are to follow.

The American Culinary Federation is the premier professional organization for culinarians and a leader in offering certification, educational resources, training, and apprenticeships. I shall foster a spirit of courteous consideration and cooperation within our profession. I shall place honor and the standing of our profession before personal advantage. I shall be fair, courteous and considerate i

n dealings with my fellow colleagues with careful regard for the good name an dignity of the culinary profession, and will scrupulously refrain from criticism to gain personal advantage. I shall never expect anyone to subject himself to rules which I would not be willing to assume myself. I shall help to protect all members against one another from within our profession. I shall be just and enthusiastic about the success of others, as I am about my own. I shall be too big for worry, too noble for anger, too strong for fear, and too happy to permit the pressure of business to hurt anyone, within or without the profession. 🎉 Big News: Asheville’s Own Chef Ashleigh Shanti Wins 2025 James Beard Award!

We’re thrilled to celebrate Chef Ashleigh Shanti, owner of Good Hot Fish, who just brought home a James Beard Media Award in the U.S. Foodways category for her debut cookbook, Our South: Black Food Through My Lens.

The book explores Shanti’s culinary roots through five regional chapters- Backcountry, Lowcountry, Midlands, Lowlands, and Homeland, each representing a piece of her story, heritage, and journey as a chef.

📍 Based right here in Asheville, Good Hot Fish blends the nostalgic spirit of traditional fish camps with Black Appalachian and Southern influences, earning national attention for its bold, soulful flavors.

👏 Let’s show our love for Chef Shanti:
• Stop by Good Hot Fish (10 Buxton Ave) and taste what all the buzz is about.
• Pick up a copy of Our South and dive into the stories, recipes, and history behind this award-winning work.
