Meat lovers come closer!😋

Pork tenderloin with Brussel sprouts and button mushrooms
Ingredients

700 g pork tenderloin
4 cloves garlic, chopped
60 g brown sugar
1/3 tsp crushed red pepper flakes
1/4 tsp smoked paprika
2 tbs soy sauce
2 tbs balsamic vinegar
800 g Brussel sprouts
40 ml olive oil
1 tsp Italian blend herbs
1 tsp garlic powder
1tsp sea salt
1 tsp ground black pepper
80 g grated Parmesan cheese
400 g whole button mushrooms
Preparation

11. Pat tenderloin dry with a paper towel.
22. Whisk together garlic, brown sugar, red pepper flakes, paprika, soy sauce and balsamic vinegar.
33. Place the pork tenderloin in the center of the foil, folding up the sides about 2 inches from the edge to make a "tray". Pour the marinade over pork tenderloin, then turn the tenderloin over a couple of times to make sure all sides are coated. Bake in the oven for 20 minutes at 220°C, using tongs to turn the pork over in the sauces every 5-10 minutes.
44. Arrange Brussel sprouts on the other half of the sheet pan (non-foil half). Drizzle with oil, toss to coat, then season with salt and pepper, Italian herbs, garlic powder, and Parmesan cheese. Bake for 15 minutes. Add button mushrooms and switch the oven to GRILL. Brown the pork and vegetables for 5 minutes. Allow pork to rest for 5 minutes before slicing it and serving.

Something new for the family, try it out!😋

Delicata Squash, Radicchio, Garbanzo Salad

Ingredients

FOR THE DRESSING
3 tablespoons olive oil
2 tablespoons balsamic vinegar
1 small garlic clove, grated
salt and pepper
FOR THE SALAD
1 16-ounces can of garbanzo beans
1 large (2 small one) delicata squash, scrubbed well
salt
2 tablespoons olive oil
½ teaspoon cumin
½ teaspoon coriander
1 teaspoon paprika
½ teaspoon black pepper
1 large head of radicchio, cored, quartered and leaves separate and torn if too large
3 scallions, white and light green part thinly sliced
¼ cup chopped Italian parsley
2 tablespoons pomegranate seeds (optional)
Preparation

1Whisk the dressing ingredients in a small bowl and set aside.
2Preheat the oven to 400F.
3Cut the squash crosswise in ½-inch rounds slices and scoop out the seeds. Place the rings in a large bowl. Add olive oil, 1 teaspoon salt, cumin, coriander, paprika, and black pepper and toss well. In a rimmed baking sheet lined with parchment paper, arrange the delicata rings making sure that they do not overlap. Place the cookie sheet in the hot oven and roast until golden brown and tender, around 20 to 25 minutes, flipping once. Remove from the oven and brush some of the dressing over the rings. Cool to lukewarm.
4While the delicata is roasting in the oven, drain the garbanzo beans and place them in a small pan, cover with water, add salt and bring to a gentle boil. About 7 to 8 minutes. Taste to make sure the garbanzo beans are tender to the bite and have the right amount of seasoning. Drain and set aside.
5In a large wide serving dish, spread the radicchio. Stir the scallions with the garbanzo beans and spoon over the radicchio. Arrange the delicata rings around the salad and sprinkle with parsley and pomegranate seeds. Drizzle with the remaining dressing

Butter Cookies Giangi's Style

Ingredients

2 cubes, 4 ounces each cube, unsalted butter
1/2 cup sugar
2 tablespoons water
½ teaspoon almond extract
2 cups flour
Preparation

1Add ingredients, flour last, and work with a fork. Make little balls and flatten with the back of a fork in a buttered cookie sheet.
2Bake at 325° for 10 minutes.

Mac and cheese with tuna

Ingredients

1 packet Elbow macaroni(7oz)
1 cup Digonally sliced celery
1/2 cup Pimiento-stuffed olives
1 can Tuna,drained(9 1/2oz)
2 tablespoons Grated onion
2 teaspoons Salt
1/4 teaspoon Ground pepper
3 cups Shredded Cheddar cheese
2 tablespoons Butter or margarine
1 tablespoon Flour
1/2 teaspoon Salt
1/4 teaspoon Ground pepper
1 cup Dairy sour cream
1 cup Dry white wine (can use vinegar instead)
1 tablespoon Butter or margarine
Preparation

1Cook macaroni as directed on package; drain and rinse. Stir celery and olives into macaroni. Heat oven to 375'. Place half of the macaroni mixture in ungreased baking dish, 13 1/2x8 3/4x1 3/4 inches. Mix tuna, onion, 1 teaspoon salt, 1/4 teaspoon pepper and the cheese. Sprinkle macaroni mixture with half of the una mixture; repeat.
2Melt 2 tablespoons butter in 2-quart saucepan over low heat; stir in flour, 1/2 teaspoon salt and 1/4 teaspoon pepper. Cook over low heat, stirring constantly, until mixture is smooth and bubbly. Remove from heat. Stir in sour cream and wine. Heat to boiling, stirring constantly. Pour over tuna mixture; dot with 1 tablespoon butter. Cover with aluminum foil and bake 30 minutes. Pan Seared Lamb Loin With Chimichurri & Roasted Trio Squash Salad With Goat Cheese and Pinenuts

Ingredients

Ingredients for Pan Seared Lamb:
4 lamb loins (or however many you want to buy)
2 tablespoons extra virgin olive oil
kosher salt to taste
ground black pepper to taste
Ingredients for Chimichurri:
1/4 cup cilantro, finely chopped
1/4 cup mint, finely chopped
1/4 cup flat leaf parsley, finely chopped
1/4 cup pinenuts, toasted, finely chopped
1 shallot, finely minced
1 garlic clove, finely minced
1 lemon, freshly squeezed
1 tablespoon red pepper flakes, chopped
2 tablespoons extra virgin olive oil
kosher salt and pepper to taste
Preparation

1Preheat oven to 400F.
2For the Chimichurri, place all of the ingredients in a large bowl and incorporate together. Season with salt and pepper.
3Heat a large, heavy bottomed pan with the oil. Sprinkle each side of the lamb loin evenly with salt and pepper. (This cooking process is exactly like the way you make steak). Once the oil is hot (it will smoke a little bit), sear the lamb loin, about 2 minutes per side and allow the lamb to cook the rest of the way in the oven. The cooking times are as follows:
4If you like your lamb rare, place it in the oven for no more than 2-3 minutes. If you like your lamb medium rare place it in the oven for about 6-8 minutes. If you like your lamb medium place it in the oven for 9 to 11 minutes. If you like it well done leave it in there for 12-14 minutes. Remember, the lamb will continue to cook after you take it out so plan accordingly.

Dried Cranberry Chocolate Chips Cookies

Ingredients

2 cups unbleached all-purpose flour
1 cup old fashioned rolled oats
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
2 1/2 sticks ( 10 ounces) at room temperature unsalted butter
1 cup light brown sugar
1/2 cup granulated sugar
1 large egg
1 large yolk of egg
1 tablespoon vanilla extract
3/4 cup bittersweet chocolate chips
3/4 cup white chocolate chips
1 1/2 cup dried cranberries
Preparation

1Preheat oven to 325º.
2Line 2 baking sheets with parchment paper
3In a medium bowl mix the flour, baking powder, baking soda, and salt. In a standing mixer fitted with the paddle beat the butter and both sugars at medium speed until creamy. Add the egg followed by the egg yolk and vanilla, beating well between additions and scraping down the side of the bowl. Beat in the dry ingredients. Add the chocolate chips and the dried cranberries and beat until well incorporated.
4Spoon heaping teaspoons, or use an ice cream scooper, of the dough onto the baking sheets, 2 inches apart. Bake for 12 to 15 minutes, until the cookies begin to brown at the edges.
5Let the cookies cool on the baking sheets, and then transfer them to a rack to cool completely.

Need a quick dessert for dinner guests? Try this!😋

Apple and prune strudel

Ingredients

200 g pitted prunes
80 ml rum
800 g apples (about 600 g peeled and cored)
3 tbs honey
½ tsp ground cinnamon
¼ tsp ground cloves
¼ tsp ground ginger
1 packet of vanilla sugar (10 g)
Grated rind of ½ lemon
150 g butter, melted
12 sheets of fresh filo pastry, divided
Powdered sugar for dusting
Preparation

1Soak prunes in rum for several hours or overnight.
2Gently heat prunes, rum and honey for 1-2 minutes over medium-high flame until honey is dissolved. Stir and set aside.
3Peel and core all the apples and cut them into walnut-sized pieces.
4Place them in a bowl with cinnamon, ground cloves, ground ginger, vanilla sugar, soaked prunes and grated lemon rind. Toss gently together and set aside.
5Lay a sheet of pastry on top of the clean working surface. Brush with a little butter and place the next sheet on top, brush again with butter. Continue layering and buttering as before until all 6 sheets are used.
6Using a slotted spoon, pile the half of fruit along the length of the front edge making sure that the prunes are evenly distributed. Roll the pastry around the fruit into a sausage shape, tucking in the ends. Repeat with the remaining 6 sheets. The amount is enough for 2 strudels.
7Transfer to baking sheet lined with parchment paper. Brush each roll with melted butter.
8Bake in the oven at 190°C for 25-30 minutes or until crisp and golden.
9Dust with powdered sugar and serve warm or chilled the following day.
