It’s a recap of my early January trip down to Peñuelas for La Clínica de Comida in support of the earthquake relief efforts. S**t was intense and terrifying, with the south of the island carrying the most trauma.

HUGE thank you to my director , .medicina , , + .smash for supporting the mission and adding their talents and help where they could. We went to cook, show love and be with our people, so I am forever grateful to them. Special shout out to , the master communicator and coordinator for the weekend.

What more can I say about this Boricua style corned beef, other than it’s my childhood fave, it’s beyond satisfying and it’s best served with arroz blanco + maduros?! This recipe is proper and traditional. I even added in CLASSIC sofrito recipe for ya...Buen Provecho!
INGREDIENTS:
2 -12oz cans corned beef (I HIGHLY recommend Libby’s Brand)
3 heaping tablespoons sofrito (see recipe at illcooklikeyourmother.com/recipes/sofrito) 1 8oz can tomato sauce
2 packets sazon
2 cups potatoes, cubed
1 cup alcaparrado olive + caper mix (optional, but traditional)
1-1​5oz ​can corn (frozen or fresh works, too)
3⁄4 cup water
3 tablespoons olive oil
2-3 cups vegetable oil
salt/pepper to taste
METHOD:
1) Heat vegetable oil to high heat in a heavy bottom pot that’s deep enough for frying (3​50F is ideal). Once the oil is hot enough, add the potatoes and reduce to a medium high heat. Be sure to monitor your potatoes, turning them when they need it. Take one out of the pot and check for doneness by tasting it...always taste your food! Once they are golden and cooked on the inside, remove from the oil and drain on paper towels...salt them immediately and set aside.
2) Put a pot/pan on medium high heat and add the olive oil. Heat oil FIRST, then add in sofrito and stir fry for about one minute. Add in tomato sauce and sazon and stir it well until it slightly thickens and turns a rusty green color.
3) Thoroughly incorporate your cans of corned beef, then add the water. Now you can add in your corn and alcaparrado mix. Stir once again, add in your black pepper and salt to taste. *NOTE: Corned beef is already a bit salty so you may need less salt than you are accustomed to.
4) Reduce heat to medium-low, cover and let it simmer out for a good 20 min, then add in reserved potatoes and stir well. Serve with steamed white rice and SWEET fried plantains. @ San Juan, Puerto Rico

Mera.. hay comida en la casa! I’m making my ABSOLUTE childhood favorite of Boricua style corned beef (always Libby’s brand). Today is the day I make a fresh batch of sofrito and fry up papas to add to the pot. I also have some fat, juicy platanos from Cayey. GIVE THANKS.

Yes, the news is true...Puerto Rico is on lock down. There is a 9pm-5am curfew and all establishments will be SHUT DOWN until at least March 30th. Only hospitals, pharmacies and grocery stores will be open. I’m using cooking as therapy (per usual). Tonight in my quarantined kitchen: pork/kale/garlic/ginger/scallion/cilantro dumplings. Steamed, then pan fried. Hot chili oil, too! @ San Juan, Puerto Rico

This past saturday, popped up in Puerta de Tierra with acupuncture from and food by .. We had many people from the community who had never experienced acupuncture under the healing tent with needles in their ears and backs, straight chillin 🙂 We had a 75% vegan menu (25% fish), packed with flavor and love: -Yuca con ajo: cilantro + onions fried in garlic, oil and vinegar
-Bacalao salad: fresh tomato, red onion, scallion, cilantro, lemon, bell peppers
-Brown rice with tomato and garlic
-Garbanzo salad: carrot, celery, red onion, lemon oil, herbs
-Shaved cucumber and tomato salad with onion and avocado 🌿🍃🌿🍃🌿🍃🌿🍃🌿🍃 When I tell y'all people were out here coming back for extra food!!! It was a good stroke to the chef ego, but it was better knowing we were sharing wholesome vegetables and healthy fats. This area is a bit of a food desert and we have two nice restaurants that have been around forever but grocery stores take extra effort and time to get to. And fresh produce? FORGET IT. You'll find plenty of frituras, white rice, fried meats, etc. All delicious, but we need and deserve more. The people were with it and that's all that matters. Just goes to show that if we at least have these options that many of us will be open to choosing them. aims to provide those options again and again.
