✨INCUBATEE SPOTLIGHT✨

A traditional dish does not always have to stay in its usual form. Sometimes, innovation begins by finding a new way for people to enjoy familiar flavors.

That is the idea behind TINAWID InabRamen, a student-developed food product led by Fiona Elle Syzette Tenedor. Inspired by the traditional Ilocano dish inabraw, the product brings together native garlic, dehydrated vegetables, and local fish-based ingredients in a convenient noodle meal that reflects both nutrition and local food culture.

Developed through academic work and entrepreneurial planning, TINAWID InabRamen shows how local dishes can be reimagined into more accessible and marketable products. Beyond convenience, the product also carries a bigger purpose: to promote locally available agricultural resources, support local farmers, and highlight Ilocano innovation through food.

📍Tinawid InabRamen is available at the White Gold Heritage Incubation Center, located at the La Tabacalera Compound, Gen. A. Luna St., Laoag City 2900, in front of Museo Ilocos Norte. For inquiries, you may contact them through landline at (077) 677-3677.

✨INCUBATEE SPOTLIGHT✨

In Batanes, a garlic harvest does not have to end once the fresh bulbs leave the field. With the right idea, it can take on new forms and reach new markets. 🧄

This is the opportunity that Teodora C. Salamagos of San Antonio, Basco, Batanes saw in locally grown garlic. Instead of allowing excess produce to lose its value after harvest, she began transforming it into products that are practical, flavorful, and easier for consumers to enjoy throughout the year.

Her Dorskie Garlic Chips, Garlic Powder, and Garlic Bits each showcase Batanes garlic in a different way from a crisp savory snack, to an aromatic everyday seasoning, to flavorful garlic pieces ready for a variety of uses. Together, they reflect how a familiar local crop can be given greater value through simple and purposeful processing.

For Teodora, the venture is also about making better use of every harvest. By developing value-added garlic products, she hopes to help reduce post-harvest losses, create additional income opportunities, and introduce more consumers to the distinctive agricultural products of Batanes.

From locally grown garlic to products ready for the market, her journey shows how value adding can help a harvest go further.

When farmers have more ways to bring their harvest to market, garlic can create value beyond its fresh form. 🧄

For the Bacarra Zanjera Irrigators Multi Purpose Cooperative (BZIMPC) of Brgy. Buyon, Bacarra, Ilocos Norte, value adding is one way of creating additional opportunities for locally produced garlic and the farmers behind it. The cooperative, duly represented by Mency V. Tolentino, continues to explore food processing as another market pathway for local agricultural produce.

Among BZIMPC’s garlic-based products are Garlic Noodle and Garlic Chili Oil, two familiar food products given a distinctly local character through Ilocos garlic. The cooperative also produces Longaniza, Embutido, Pork Tapa, and Tocino as part of its processed food product line.

BZIMPC is also a beneficiary of the Department of Agriculture–Philippine Rural Development Project’s Commercialization of Ilocos Garlic/Garlic Trading sub-project, supporting efforts to create added value from good-quality garlic that may otherwise remain unsold and to expand market opportunities for farmers.

While challenges such as increasing raw material costs remain, the cooperative continues to strengthen its food processing activities through product development, proper food safety practices, and available institutional support.

📍 BZIMPC Garlic Noodle and Garlic Chili Oil are available at the White Gold Heritage Incubation Center, located at the La Tabacalera Compound, Gen. A. Luna St., Laoag City 2900, in front of Museo Ilocos Norte. For inquiries, you may contact them through landline at (077) 677-3677.

From growing garlic in the field to finding new ways for people to enjoy it, JVI Integrated Farm shows how value adding can extend the possibilities of a local harvest. 🧄

Located in Brgy. Caraitan, Badoc, Ilocos Norte, the farm is owned by Janet V. Iglesia and began as a garlic-producing enterprise. Over the years, the goal grew beyond production: to make better use of locally grown garlic, reduce post-harvest losses, and develop products that can reach new markets.

That direction led JVI Integrated Farm into food processing, with products such as Toasted Garlic Candy and Mushroom Chips with Garlic. By presenting garlic in creative, ready-to-eat forms, Janet is helping broaden how local garlic can be utilized while creating additional opportunities for farmers and consumers alike.

The farm is also an accredited Learning Site for Agriculture (LSA) under DA-ATI RTC I, reflecting its continued commitment to learning, training, and agricultural development. Despite challenges such as price fluctuations and market competition, JVI Integrated Farm continues to improve through innovation, proper food handling, and careful production practices.

For garlic farmers, adding value to every harvest can open opportunities beyond selling fresh produce. 🧄

For Elvis L. Pidut of Badoqueños Natnateng Association Inc. in Badoc, Ilocos Norte, this opportunity takes shape through Garlic Morsels, a garlic-infused polvoron that gives a familiar Filipino delicacy a distinctly local character.

Made with locally grown Ilocos White Garlic, known for its strong aroma and rich flavor, Garlic Morsels reflects the association’s goal of transforming local garlic into unique and marketable products. Through food processing, Elvis contributes to creating additional uses for the community’s harvest while helping promote and sustain the local garlic industry.

Like many growing enterprises, the venture continues to work through challenges in capital, equipment, market competition, packaging, shelf life, and production capacity. These challenges also drive continued improvement, with attention to proper food safety practices and maintaining a clean production area.

What started as an academic project is now becoming an opportunity to turn local ingredients into something with greater market potential. 🧄

For Nicole Althea Pambid of UMILI Gourmet Salt, the journey began in February 2026 with an idea developed through research, product development, and teamwork. Today, that idea has grown into a food processing venture offering gourmet salt blends infused with different aromatics for distinctive and flavorful seasoning.

Through UMILI Gourmet Salt, Nicole aims to create affordable, locally inspired products while promoting the use of local ingredients and supporting local agriculture. As a young entrepreneur, she continues to improve the business while balancing school responsibilities, production, and product promotion, learning from teamwork and customer feedback along the way.

Sometimes, a business begins with something as simple as sharing homemade food with the people around you. 🧄

For Cherry Joy Garma, founder of Cherry Pickles, that moment came when she brought a jar of homemade pickled bawang to the office. The positive response from her officemates inspired her to turn a household favorite into a business that highlights local garlic and the distinct flavors of Ilocos.

Her Pickled Bawang is a ready-to-eat side dish made with garlic soaked in Sukang Iloko, pepper, and siling labuyo, bringing together savory and tangy flavors, gentle heat, and a touch of sweetness.

Through Cherry Pickles, Cherry continues to explore the value-adding potential of garlic while supporting local products and creating more market opportunities for locally grown produce.

A simple snack can also create new possibilities for local garlic. 🧄

For Emely A. Dagdagan of EA Enterprise, that idea became Garlic Crunch Kropek, a preservative-free snack made with naturally gluten-free cassava starch and fresh local garlic, delivering a rich garlic flavor and satisfying crunch in every bite.

Established in May 2026 in Brgy. Puritac, Pinili, Ilocos Norte, EA Enterprise continues to turn locally sourced ingredients into flavorful value-added products. Through Garlic Crunch Kropek, Emely aims to offer a quality snack while supporting local farmers and promoting the use of fresh local garlic.

A jar of pickled garlic can begin with a simple idea: give local garlic more value and create more opportunities from it. 🧄

For Judie C. Viernes of Viernes Garlic Farm, that idea became Friday’s Pickled Garlic. Established in July 2026, his venture turns locally grown Ilocos White Garlic into a value-added product known for its distinct aroma and savory, tangy flavor.

More than developing a product, Judie’s goal is to build an additional source of income while helping create a sustainable market for locally produced garlic. Each bottle is prepared with attention to proper food handling and product quality as the business continues to learn, improve, and grow.

From curiosity to a potential source of income through black garlic. 🧄

What began with questions about black garlic became a hands-on learning experience for garlic farmers from Ilocos Norte and Ilocos Sur during the Black Garlic Processing Training on July 30, 2026.

Conducted by the Taiwan Technical Mission in the Philippines – Garlic Project and facilitated by Ms. Noralyn B. Legaspi, Chief of the Garlic Research Center, the training introduced participants to proper garlic selection and preparation, safe fermenter operation, machine settings, batch monitoring, troubleshooting, product evaluation, and equipment care.

Finished samples helped participants identify the expected color, aroma, taste, texture, moisture, and overall quality of black garlic. The tasting activity also allowed them to compare products made from different garlic varieties, while their questions opened discussions on both production and marketing.

More importantly, the training showed how farmers can go beyond selling fresh garlic by transforming it into a higher-value product. Pursuing black garlic processing may create additional income opportunities, improve the potential profitability of their harvest, and encourage the development of new garlic-based products when supported by proper processing and market opportunities.

By the end of the activity, black garlic was no longer simply a product to taste, it became a possible enterprise opportunity for farmers and processors seeking greater income through value addition.
