⏳«The easiest way to see power in the food system is to look at its shape. It’s an hourglass, with millions of farmers and farmworkers at the top, eight billion eaters at the bottom, and between them a narrow waist of corporations through which almost everything must pass: a handful of grain traders, seed and chemical firms, processors, and retailers.

In English it is called taro runners or taro stolons (Colocasia esculenta).

As it is high in fiber, it promotes healthy digestion, supports gut motility, and helps regulate blood sugar levels

Specifically high in calcium (for bone health), iron (supports red blood cell production), and potassium (helps manage blood pressure).

Very high in Vitamins A and C.

Why do people avoid takway?

Like taro leaves and corms, fresh takway contains micro-crystals of calcium oxalate, which can cause severe throat itchiness if raw. It must be thoroughly peeled and fully cooked before eating.

But when you do it right, the flavor and texture is amazing!
