Egusi Soup is a true Nigerian classic — full of flavor, tradition, and love. Whether paired with pounded yam, eba, or fufu, it’s always a winner at the table. 🇳🇬💛
🥣 Egusi Soup Recipe
Ingredients:
• 2 cups melon seeds (egusi), ground
• 500g beef (or goat meat), cut into chunks
• 200g stockfish (pre-soaked)
• 200g dried fish (washed)
• 2 cooking spoons palm oil
• 2 tablespoons ground crayfish
• 1 medium onion (chopped)
• 3 scotch bonnet peppers (blended)
• 2 medium tomatoes (optional, blended)
• 4 cups spinach or ugu leaves (washed and chopped)
• 2 seasoning cubes
• Salt to taste
• 4 cups beef stock or water
Instructions:
1. Prepare the protein: Wash beef and season with salt, seasoning cubes, and onions. Boil until tender, adding stockfish and dried fish halfway through cooking.
2. Toast and fry Egusi: Heat palm oil in a pot, add chopped onions, then stir in ground egusi. Fry on low heat for 8–10 minutes, stirring to avoid burning.
3. Add pepper blend: Pour in blended peppers (and tomatoes if using), fry for 5 minutes until the oil floats to the top.
4. Combine: Add cooked meat, stockfish, and dried fish with some of the meat stock. Stir well and let simmer for 10 minutes.
5. Season & thicken: Stir in crayfish and seasoning cubes. Add more stock if too thick.
6. Add greens: Put in spinach or ugu leaves last, simmer for 3–4 minutes.
7. Serve hot with pounded yam, eba, or fufu.
