Northern durum harvest continues to advance, with early reports showing variable yield and quality conditions.

Soft Red Winter (SRW) is the third-largest U.S. wheat class, valued for its good milling characteristics and versatility in baking and confectionery applications.

The 2026 U.S. SRW wheat harvest is complete, with the crop demonstrating favorable quality characteristics. Final results show an average test weight of 59.9 lb/bu, protein content of 10.0%, and falling number of 305 seconds - quality attributes that support SRW's value to millers, bakers, and food manufacturers.

SRW's relatively low protein and soft kernel characteristics make it ideal for cookies, crackers, cakes, and pastries. For millers, it offers an opportunity to diversify flour production, while its flour characteristics support good water absorption and product quality.

Hard Red Spring (HRS) is the second-largest U.S. wheat class, valued for its high protein, strong gluten, excellent milling characteristics, and strong baking performance. HRS is planted in spring, harvested at maturity, monitored through U.S. Wheat Associates’ Harvest Reports and evaluated after harvest for key quality and baking characteristics.

In Nigeria, HRS is valued for its strong dough characteristics and high loaf-volume potential and can be used alone or in flour blends to improve dough performance.

Hard Red Winter (HRW) is the most widely grown U.S. wheat class, valued for its versatility and excellent milling and baking characteristics. HRW is harvested as the crop reaches maturity, with harvest timing and progress varying by region and weather conditions. After harvest, wheat samples are evaluated for important quality factors such as protein, moisture, test weight, and functionality. In Nigeria, HRW is commonly used for general-purpose flour and flour blending, helping millers achieve the desired quality and performance for a range of food products.

The 2026 U.S. wheat harvest continues to make strong progress, with HRW nearing completion, SRW harvest and testing complete, Soft White advancing steadily, and HRS and Northern Durum harvests gaining momentum. Early quality results remain encouraging, with generally positive yield and test-weight reports across key growing regions.

The HRW harvest is nearly complete, with under 10% remaining, and the crop continues to grade U.S. No. 1 HRW. Attention in the southern HRW region is turning to fall planting, where drought remains a concern. SW harvest advanced steadily this week; yield and test weight reports remain generally positive, while protein and falling number are being closely monitored. The HRS and northern durum harvests are beginning to move quickly under recent hot, dry conditions, with early samples starting to arrive at the lab. USDA estimates U.S. total wheat production at 1.53 billion bushels (41.7 MMT), down 23% year-over-year.
