In this art you don’t smell the incense. You listen to it.

Kogado has stood in Azabu-Juban since 1983, the quiet shop the kōdō masters trust for their fragrant wood. Its founder came from a Kyoto incense house whose line runs back about two hundred years, to the Edo period. In kōdō the wood is warmed, never burned, so there is no smoke, only scent.

The counter has a tea room attached, and it isn’t for show.

Eight seats cut from a single plank of hinoki, and Takada builds the whole omakase around the way of tea — the fish aged Tsumoto-shiki, so time does part of the work before it reaches the rice. English at the counter, reservation only, evening service.

"Wagashi is perfect." The maker at Aono Souhonpo in Azabu says it like a fact, not a line.

Thirty minutes before he lifts weights, he'll eat a daifuku or a slab of yōkan — fast energy, almost no water weight, none of the two-hour prep a real meal takes. He runs on the thing his own hands shape every morning.

Protecting it, he says, isn't keeping it under glass — it's pushing it somewhere new.

They named a monja the "Gout Set" — and visitors keep ordering it.

This isn't textbook monja. At Oshio's Makoto branch in Tsukishima, the old downtown griddle dish gets reinvented: one piled with so much rich seafood it's jokingly off-limits to anyone with gout, another that somehow tastes like carbonara. You cook it yourself, right on the iron built into the table.
