Ministry of Youth and Sports Agribusiness Training Canter Gambia Songhai Initiative (GSI) Food Processing Classes 2026

What an incredible, jam-packed week of learning, cooking, and value-addition!

From May 8th to May 12th, 2026, GSI hosted an intensive, hands-on Food Processing Masterclass.

Batch #13 total of 68 participants stepped up to master the art of transforming local ingredients into high-value, shelf-stable products.

We successfully ran 9 comprehensive modules (juice, Jam, Syrup, Yogurt, Tomatoes Paste, Pepper Sauce, Smoked/Salt catfish, Super Cereal and Cassava Gari) aimed at boosting food security, reducing post-harvest losses, and creating business opportunities for Gambian youths

📅 Quick Week-at-a-Glance Recap:
• Day 1 (Mon): 🥭 Mango Madness! We kicked off the week processing fresh mangoes into delicious Juice, thick Syrups, and sweet Jams (with an incredible 12-month shelf life!).

• Day 2 (Tue): 🍅 Savory Spices & Dairy: Participants mastered homemade Tomato Paste, fiery Hot Pepper Sauce, and creamy, fresh Yogurt. 🥛

• Day 3 (Wed): 🌾 Nutrition Focus: We produced Super Cereal (a fortified porridge blend for child nutrition) and learned the technical skills of Smoking Catfish 🐟 for long-term storage.

• Days 4 & 5 (Thu–Fri): 🪵 Tuber Transformation: A deep dive into the traditional 5-step method of making crispy, perfectly fermented Cassava Gari.

FUNDED BY EU GREEN Gambia ERASMUS + Project a consortium of Ministry of youth an Sports through Gambia Songhai Initiative (GSI), Gambia College, CINOP BV Netherlands and Liceul Tehnologic Hirlau Romania are piloting a short-term training on eco tourism, food processing, entrepreneurship and job readiness to promote youth employability

A total of twenty (20) student at each site GSI and UEG are currently undergoing the training.
The training is expected to last for 3 months including 3 weeks internships to potential eco tourism and food processing stakeholders

Practical classes during food processing included super cereal, cat fish smoking and mango juice
