Love to cook? Want to become a chef? Midunu is looking for our next cohort of interns. Those with a passion for food and culture will be the perfect fit.

As the country’s premier dining experience with a multi-award-winning chef, we know food is the glue that holds our society together and can significantly impact livelihoods and community.

Midunu Culinary Interns will support the production and ex*****on of hand-crafted chocolates and dining experiences. At the end of the 11-month program, interns would have gained a high level of expertise in various parts of our food enterprise.

As we continue to celebrate Women's History Month, I am BEYOND excited to sit down for chocolate and conversation with Hawa Hassan. This powerhouse of a woman continues to surprise and inspire me. And YES, we have a truffle named after her in this season's Discovery Collection. Can you guess which flavor it is??

Hawa Hassan, a James Beard award winner is a culinary triple threat: dynamic chef, TV personality and entrepreneur. She's the founder of Basbaas foods, a line of condiments inspired by her home country of Somalia, a fast-growing brand that has been featured in Forbes, The New York Times, Eater and more. Her first cookbook-meets-travelogue, In Bibi's Kitchen, shares recipes and stories from grandmothers—or bibis—in eight African countries, bordering the Indian Ocean.

In Ghana, February 14 is not just Valentine's Day; it is also National Chocolate Day. It is part of the efforts to produce, process, and consume more chocolate in-country. Investments such as these in the African food system and foodways are necessary to rebuild the destruction caused by slavery, colonialism, and cash crops.

Thank you for helping us elevate and reclaim the narrative that luxurious, aesthetically beautiful chocolates, using indigenous African ingredients and culinary knowledge, can add value to the economy and be 'Made in Africa'.

On this national Farmer's Day in Ghana 🇬🇭, we celebrate all the amazing farmers who make it possible for us to eat well and are a pillar of our economy. With a cocoa heritage dating back to 1879, Ghana is renowned for the quality and quantity of its cocoa, the main ingredient in chocolate. The traditional method of fermenting cocoa beans in plantain and banana leaves instills a unique flavor, while the country's quality control system provides consistency. We would be nothing without you. Ayeeko!!

Solomon Amuzu was born in the village of Brekumanso-Asamankese in eastern Ghana. He received his basic education at Brekumanso LA JSS, High School, then at Asamankese Senior High, where he studied General Agriculture. In 2010 he received his degree from The Institute of Tropical Agriculture - Kumasi. He furthered his studies in Permaculture the same year under an Australian teacher in Ghana. He has worked as a project manager for many organizations such as Ghana Permaculture Institute, Transcend International, Harvesters Mission, Sow Green Farms, the University of Wisconsin-Madison USA, and Kent State University - Ohio USA. He is currently the founder and CEO of Call To Nature Permaculture, a Ghana-based Organization that uses permaculture principles to promote community development.

Posted • There are two types of cultivated rice on our planet— those that originate from Asia, oryza sativa, and those from Africa, oryza glaberrima steud. From Afife to Akpafu Odomi, our visits to rice farms across Ghana’s Volta region confirmed accounts of our dwindling heritage of oryza glaberrima nationally. Of the farms commercially producing rice in the country, we only came across one large cooperative of 2000 women still growing oryza glabberrima.

Resistant to diseases and pests, and better at tolerating fluctuations in water, iron toxicity, severe climate change and human neglect, oryza glabberrima is highly nutritious. Accounts of vast fields of glabberrima rice cultivation along the Upper Guinea coast in the 15th century show the central role this cereal played in local diets.

In response to this large-scale displacement of glabberima rice, we sourced 10 grams of 126 accessions of rice from with help from the world’s . Half of these are oryza glabberima that we have been cultivating with the near term goal of scaling them up for seed-sharing.

Grown between 3-4months and before our second round of harvest, all 126 rice species will surround the table at the “The Rise and Fall of Ghana’s Cash Crops” dinner coming this July.

Midunu is looking for recent graduates and young foodies to undertake an internship with us! Those with a passion for food and culture will be the perfect fit.

As the country’s premier dining experience with a multi-award winning chef, we know food is the glue that holds our society together and can create a large impact on livelihood and community.

Midunu Culinary Fellows (MCF) will support the production and ex*****on of hand-crafted chocolates and dining experiences. At the end of the 11 month programme, our MCFs would have gained a high level of experience in various parts of a food enterprise.
