Refined sugar-free carrot cake 🥕
Made for my 3-year-old’s birthday and loved by the whole family 🤍
Sweetened with dates, gently spiced, and perfect for little ones.
Please note - I doubled the ingredients to make a bigger cake 🤍
🥕 Ingredients
* 140g dates, pitted
* 1 scant tsp bicarbonate of soda (for soaking dates)
* 1/4 tsp each nutmeg and ginger
* 2 tsp cinnamon
* 2 large eggs
* 180g grated carrot
* 50g chopped roasted mixed nuts
* 150ml olive oil
* 2 tsp baking powder
* 100g wholemeal flour
* 3 tbsp milk
* 100g jumbo oats
* Zest of 1 orange
🤍 Maple Cream Cheese Kefir Topping
* 100g M&S Good Gut Kefir Yogurt
* 100g low-fat cream cheese
* 1-2 tbsp maple syrup (optional)
🧑🍳 Method
Soak dates in 150ml hot water with bicarbonate for 10 mins, drain, and reserve 2-3 tbsp of liquid. Blend dates and reserved liquid to a paste. Mix date paste with eggs, and olive oil until smooth, then stir in carrots, nuts, and zest. Add flour, baking powder, spices, and oats, mixing gently. Add milk, pour into a non-stick loaf tin, and bake at 160°C for 40-50 mins. Let cool completely.
For topping, blend kefir yogurt, cream cheese, and maple syrup until smooth. Spread over each slice.
