🌶️Busy Week Fermenting Flavours!

We’re thrilled to partner with Tigre, the masters of Mexican Street Food, introducing new fermented chilli sauces to their menus in the New Year.

While they bring the big, bold flavours, we’ll make sure the science is right — testing the pH drop caused by the fermentation microrganisms converting the sugar to organic acids which keep the harmful bacteria at bay, and develop those complex flavour profiles.

Shelf Life Science in Action

In the UK, millions of tonnes of food are wasted every year — often due to short use-by dates and uncertainty around product safety. At Sustaining Shropshire, we’re changing that by helping local food and drink producers extend shelf life through science-led testing and predictive modelling.

Take . We’re working with them to predict safety risks before spoilage occurs and optimise formulations and storage conditions for their new product range.

At Harper Food Innovation’s Product Development Kitchen, our specialists carry out:

✅ Advice on microbiological testing for spoilage and pathogens

✅ Sensory evaluation for taste, texture, aroma, and appearance

As part of celebrations, Sustaining Shropshire and Harper Food Innovation teamed up to turn surplus bananas from Harper Adam's Community Fridge into something delicious — healthy banana pancakes, cooked to order!

Staff and students came together to celebrate the diversity of food cultures within our community while learning about various sustainable food initiatives and how the University is working to reduce food waste across campus.

Months of hard work results in launch of luxury Christmas pudding.

Delighted to have played a part in the launch of handcrafted new line of traditional puddings - The 1921 Christmas Pudding – ready for Christmas.

Back in January, Sustaining Shropshire supported with nutritional analysis, labelling and packaging development, helping turn a century-old family recipe into a beautifully branded product ready for market.

Looking forward to Day 2 at Ludlow Food Festival. Come and visit the Harper Adams stand and put your cheese tasting skills to the test in the sensory food booth. We're delighted to be developing this partnership with the festival, raising awareness of food production and how we can build resilience and sustainable solutions in the future.

Fantastic to see so many of Shropshire food companies Sustaining Shropshire has worked at the festival and hoping they continue to do brisk business over the next 2 days.

"It's been an absolute pleasure studying for my MSc in Rural Estate and Land Management and working on the incredible Sustaining Shropshire project over the last 3 years. I'll miss this campus and its community massively!
