Kimchi School Pilot Success Story

13–15 November • Pilot Class & 3rd Visit to Korean School in London

From 13 to 15 November, we completed a truly inspiring pilot of Kimchi School at the Korean Community Centre, led by Kimchi Master Ha Yeon Lee and Professor Yang Ja Bae — two incredible experts dedicated to passing on the depth of Korean food heritage.

This was also our 3rd visit to the Korean school in London, where students had the opportunity to learn not just how to make kimchi, but also to understand its cultural roots and the traditions that have shaped Korean cuisine for generations.

Thank you to everyone who supported and participated in this wonderful experience. We look forward to growing Kimchi School and offering even more opportunities to share Korean culture in the UK.

A Royal Kimchi Moment to Remember!

On 8 November 2023, I had the great honour of presenting Kimchi and a Kimchi Recipe Book to His Majesty King Charles III during his visit to New Malden.

It was a privilege to accompany the King and help organise the cultural programme that showcased the beauty of Korean tradition and community spirit.

Grateful to Master Ha Yeon Lee for creating a special Kimchi for His Majesty — a true taste of Korean warmth and artistry.

We’re excited to welcome Master Lee back to London to teach Kimchi-making classes on 13–14 November 2025 — don’t miss this special chance to learn from one of Korea’s finest masters!

Celebrating Korea’s Culinary Heritage

Since 1994, the Ministry of Agriculture, Food and Rural Affairs in Korea has honoured 80 individuals as Grand Masters of Traditional Korean Food — the true guardians of Korea’s authentic culinary traditions, from kimchi and jang (fermented pastes) to rice cakes, teas, and traditional liquors.

Among them, only five have been recognised as Grand Masters of Kimchi, dedicated to preserving the deep-rooted heritage and techniques behind Korea’s most iconic dish.
We are honoured to welcome Kimchi Grand Master Ha Yeon Lee to the Kimjang Festival 2025 in London.

Kimchi: Korea’s Living Superfood

We’ve all heard of kimchi — a simple Korean dish of fermented vegetables, usually cabbage or radish. With over 700 Korean restaurants in the UK and supermarkets now selling kimchi nationwide, it has become a familiar name, thanks to the global K-Wave of K-pop, K-dramas, and Korean films.

While social media offers endless kimchi recipes, learning online can never replace the real thing — you can’t taste, smell, or feel the texture that defines authentic kimchi. At a food exhibition two years ago, I tried a supermarket kimchi that tasted far too sweet — and realised how easily its true essence can be lost.

Kimchi is celebrated as a superfood because it’s rich in natural probiotics that support gut health. But if made incorrectly or overly sweet, it loses that benefit. That’s why it’s important to learn kimchi-making face to face, experiencing its aroma, texture, and balance firsthand.

As Koreans believe, food is medicine — and when made the right way, kimchi is one of the healthiest medicines of all.
