Every week we'll post a new tasty, healthy recipe and here's a great one I tried yesterday: humitas! This is a lovely vegetarian recipe from South America made from corn cobs. You can make it with the corn husks but a tip to make it quick and easy is to use cling film instead. Serve them with a salad and salsa, or like I tried, with coriander pesto. Now get down to St Hilda's and get your corn on Thursday!

Humitas are savory cakes made from a mixture of freshly ground corn, onion, garlic, cheese, eggs, and cream, which is placed inside corn husks and steamed.

Are you 'providing social benefits, such as good quality food, safe & healthy products – DID YOU KNOW many fruits/veg are harvested before they ripen & stored over long periods & sometimes with post harvest chemical treatments such as fungicides to increase shelf life – BUY MORE SEASONAL FOOD & fresh produce from local farmers or a local food co-op so what you buy is in season, getting more for your money as when buying locally you do not pay for the refrigeration & packaging of the products.

Are you 'protecting the diversity of both plants and animals & avoiding damaging natural resources & contributing to climate change' - DID YOU KNOW according to figures from the United Nations animal farming globally causes more greenhouse gas emissions than all of the cars, lorries & planes in the world put together - to reduce environmemtal impact of the food you eat you can reduce the amount of red/processed meat you use in food preperation and up the levels of veg and wholegrain ingredients.

Are you 'contributing to thriving local economies and sustainable livelihoods' - DID YOU KNOW world market prices for crops such as sugar and rice are highly volatile and often fall below the cost of production, reasons include unfair rules governing international trade - By buying Fairtrade products you are supporting the well-being and livelihoods of producers and labourers in poorer contries, improving trade relationships and ensuring better working conditions.
