Another one worth saving. šŸš

This is exactly the sort of meal I mean when I say eating for your goals doesn’t have to mean eating boring food.

Underneath the sticky sauce and everything that makes it look this good, you’ve essentially got chicken, rice and some veg! A solid serving of protein, plenty of carbs to support training, and something you’d actually look forward to eating.

Because enjoyment matters too. The meals you can happily come back to week after week are usually far more useful than the theoretically ā€œperfectā€ ones you don’t want to eat.

Sticky Honey Garlic Chicken Bowls — serves 4

Chicken

* 600g chicken breast or thighs, cut into bite-sized pieces
* 2 tbsp cornflour
* 1 tsp smoked paprika
* ½ tsp garlic powder
* Salt & black pepper
* 1 tbsp oil for frying

Sticky Honey Garlic Sauce

* 4 garlic cloves, finely grated
* 80g runny honey
* 60ml light soy sauce
* 1 tbsp rice vinegar
* 1 tbsp sweet chilli sauce
* 1 tsp sesame oil
* 1 tsp grated fresh ginger
* 1 tsp cornflour mixed with 2 tbsp water

Quick Pickled Cucumber

* ½ cucumber, thinly sliced
* 2 tbsp rice vinegar
* 1 tsp sugar
* Pinch of salt

To serve

* 300g rice
* 3 spring onions, finely sliced
* Sesame seeds
* Fresh coriander (optional)
* Lime wedges

It’s worth occasionally asking whether the things we’re working so hard towards are things we actually chose.

Have somewhere you want to go.

Move towards it.

Just don’t miss your life on the way there.

And make sure the goals you’re chasing are actually YOURS.

This Bang Bang Chicken with Red Pepper Salad from is exactly the sort of meal I love to recommend.

Plenty of protein, a good serving of carbs to support training, some colour and variety from the salad, and equally importantly, it’s something you’d actually want to eat again.

Nutrition doesn’t need to mean creating a completely different meal every night.

Find five or six good ones that fit your goals, that you enjoy making, and that you’re happy to keep coming back to.

Bang Bang Chicken with Red Pepper Salad (3 servings)

For the chicken
800g chicken thighs
3 tbsp cornflour
2 tbsp Greek yoghurt
1 tbsp brown sugar
2cm piece ginger, cubed/minced
3 spring onions
1 tbsp dark soy sauce

Bang Bang sauce
5 tbsp Greek yoghurt
3 tbsp sweet chilli sauce
1 tsp Sriracha
Juice of ½ lime

Rice
200g uncooked rice

Red pepper salad
1 red pepper
1 cucumber
½ red onion
Small handful coriander
1 tsp chilli flakes
1 tbsp olive oil
Pinch of salt
Juice of ½ lime

To make it

Mix the chicken with the cornflour, yoghurt, brown sugar, ginger, spring onion and soy sauce, then cook in a hot pan until golden and cooked through.

Cook the rice according to the packet instructions.

Mix the Greek yoghurt, sweet chilli sauce, Sriracha and lime together for the Bang Bang sauce.

For the salad, chop the red pepper, cucumber and red onion, then combine with the coriander, chilli flakes, olive oil, salt and lime.

Rice down first, chicken on top, plenty of Bang Bang sauce and the salad alongside.

This is a before-and-after but not like you’re used to seeing it!

Four weeks on, and as the volume and intensity have increased, Britta is handling the session demand more effectively and recovering better.

This, along with feedback from the athlete themselves, builds the bigger picture and tells us where we’re going.

So when we arrive on race day, we’ve controlled the controllables and given her the best chance to perform 🫔

It’s too long. Most people won’t get past the first 7 seconds…

I filmed it in my car without a mic so the audio is pretty sub-par (I was brainstorming and just hit record)…

Recipes Worth Saving šŸ½ļø

I came across this recipe from and thought it was far too good not to share.

If you’re training regularly, having a handful of simple, repeatable meals like this makes eating well so much easier.

You don’t need hundreds of recipes, you just need a few good ones you genuinely enjoy and can come back to week after week.

Honey Lemon Garlic Chicken

Ingredients
• 3 chicken thighs
• Salt & pepper
• Cornflour

Sauce
• 3 tbsp butter
• 3 garlic cloves, minced
• 2½ tbsp soy sauce
• 2 tbsp honey
• Zest of 1 lemon
• 1 tbsp paprika
• 1½ tsp chilli flakes

Method

1. Season the chicken with salt, pepper and cornflour.
2. Pan fry over a medium-high heat for 6–8 minutes per side until golden and cooked through.
3. Melt the butter, then stir in the remaining sauce ingredients.
4. Reduce until thick and sticky.
5. Return the chicken to the pan and coat well.
6. Serve with rice, sesame seeds and spring onion.

Top tip: Once you’ve coated the chicken, keep reducing the remaining sauce until it’s almost jam-like, then spoon it over the top.

Confidence and nerves sometimes DO go together

But your nerves just show you care.

Confidence doesn’t always sound like:

Sometimes it sounds like:
ā€œI have prepared properly, and I trust myself to respond when it becomes tough.ā€
