SABRAGE 🤺🔪 During our Black Diamond Run themed blind tasting I got a class from Champagne expert JB on how to saber a bottle. A bottle of Tissot blanc de blancs for my first sabrage 🍾. Jura, I love you!

What can I say? We were spoiled at Pereira d'Oliveira's and we loved it. 14 Colheitas and Frasqueiras from 2007 to 1908 😲. Varnish, charred wood, salted caramel, freshly ground coffee, balsamic, grilled nuts. The list goes on...

Pereira d'Oliveira didn't start exporting their wine until the 80s. As a result they have an impressive array of old vintages even back to the 19th century. And of course the most impressive is that the bottlings are recent.

In class we even had the opportunity to taste their Terrantez from 1912 and a Verdelho from 1890 🤯. A big thanks to D'Oliveira for their generosity and hospitality! .ip.ram

The Madeira Educator Course started under the jungley pergolas of Sao Vicente on the north side of the islnad. Here we don't talk about socalcos or terraces, but Poios which are made of basaltic rocks. The viticulture is chalenging with high humidity and slopes of 19-30% which makes hand harvest the only option. Plots are tini tiny-- an average of 220 square meters per grape grower.

We learned to identify diseases, grape varieties by their leaves, and the many other plants that grow amongst the vines: papayas, onions, sweet potatoes etc..

Needless to say, these are some of the most stunning and surprising vineyard landscapes with lush green jungle, surrounded by the ocean and hugged by dramatically steep cliffs.

My love for oxidative wines started with comté and Vin Jaune (of course). Merci

With or without flor, they are my regular craving. That's why I always have a bottle of Sherry in the fridge. The solera system always amazed me, especially with flor. And seeing the bodegas firsthand during the Sherry Educator Course was an incredible experience.

So now I'm on a mission to collect the most sous voile (flor) wines as possible: from Jerez to the Jura, from Tokaj to Sardinia, or from the obscure adventurous wine producer that was willing to take the risk.
