Promoting Compassion Through Vegetarianism

The members of Karzay Foundation, led by the Coordinator of Haa Dzongkhag, came together at Haa Normal Chenmo to offer a generous contribution of Nu. 81,333 and raise awareness about the many benefits of adopting a vegetarian lifestyle.

🌿 Celebrating Bhutanese Vegetarian Cuisine in Phuentsholing 🌿

The Bhutanese Vegetarian Culinary Training concluded successfully with a closing ceremony graced by our esteemed Chief Guest, Dasho Drugpa, distinguished guests, trainer, and all participating chefs.

We extend our heartfelt gratitude to Dasho Drugpa and all our distinguished guests for joining us and making the occasion special. Our sincere appreciation also goes to our funding partners, V4GCP and HAB, for making this Bhutanese Vegetarian Culinary Training possible, and to the Bhutan Chamber of Commerce and Industry (BCCI) Regional Office for their support in organizing this program.

We also extend our heartfelt thanks to our trainer, Chef Krishna Lepcha, all participating chefs, coordinators, partners, and everyone who contributed their valuable time, dedication, and support to the success of this initiative.

A special highlight of the closing ceremony was the launch of our Authentic Bhutanese Vegetarian Recipe Book, created to preserve and promote our rich culinary heritage while encouraging healthier, compassionate, and sustainable food choices. The participating chefs were also awarded certificates in recognition of their successful completion of the training.

As Phuentsholing is our border town and welcomes many visitors from India, it is important to have authentic Bhutanese dishes that allow our Indian guests and other visitors to experience and taste the unique flavors of Bhutan.

We hope the skills and knowledge gained through this training will help preserve our rich culinary heritage, strengthen Bhutanese cuisine in the hospitality sector, and promote healthier and more sustainable food choices.

Today, participants of the Bhutanese Vegetarian Culinary Training (BVCT) visited our Sunday Market to explore the wide variety of fresh, organic, natural, and locally produced farm products offered by the farmers.

Using ingredients sourced directly from the Sunday Market, each participant prepared their own unique Bhutanese vegetarian dish, showcasing creativity, authenticity, and the rich flavors of locally grown produce. They also presented their individual dishes, highlighting how simple, fresh, and local ingredients can be transformed into delicious and beautifully presented Bhutanese cuisine.

The Regional Office of the Bhutan Chamber of Commerce and Industry (BCCI), with funding support from V4GCP and HAB and technical support from the Karzay Foundation, has officially commenced a week-long Bhutanese Vegetarian Culinary Training in Phuentsholing. The training began today and will conclude on the 23rd.

A total of 15 chefs are participating in the program, including 10 chefs from star-rated hotels, 2 senior chefs from tourist-frequented restaurants, and 3 chefs representing the ecotourism sector.

The training is being led by Executive Chef Krishna Lepcha. On the first day, participants prepared three authentic Bhutanese vegetarian dishes:

1/ Bhutanese Breakfast Setting, featuring Jaju, Toetshey, Ezay, and Suja.

2/Kakur Bayzum, a braised local pumpkin dish.

3/Bhutanese Datse Variations and Combinations, served with Jaju and Koeptaa (traditional Bhutanese bread).

4/ Ngakhegchung Tsheom (Asparagus curry)

As part of the program, the participants will also visit the Sunday Market in the heart of Phuentsholing to explore the wide variety of organic, natural, and locally grown farm produce available in the region. This hands-on experience will help the chefs incorporate fresh local ingredients into authentic Bhutanese vegetarian cuisine.

This initiative aims to position Phuentsholing as a culinary destination where tourists and day visitors can experience and enjoy authentic Bhutanese food. It also seeks to revive traditional Bhutanese recipes, promote healthier vegetarian food choices, and showcase the country’s rich culinary heritage through locally sourced ingredients.
