H5N1 Community Discussion

Today, around 30 community members came together to hear Dr Joanne Sillince’s detailed presentation. It gave us a thorough look at what’s happening with wildlife and our domestic birds and animals right now. We’re so grateful for everyone who joined us and for the great questions they asked!

A truly wonderful cultural day! We had a fantastic time exploring the East Gosford Art Gallery and Japanese Gardens. The exhibitions were absolutely amazing and definitely worth a visit. We were particularly impressed by Aunty Ellen Trevorrow’s weaving exhibition. Our younger members had a blast feeding the fish and ducks and soaking up the sunshine. The interactive display filmed at Somersby Falls was especially beautiful to watch. A great day out to enjoy what is available locally.

Starting off the second half of the year with monthly recipes! (Where has the year gone?)

Each recipe will include produce that will support seasonal eating! Seasonal eating means choosing food that is naturally in season in your local area. It’s about supporting local farmers, reducing food miles, and enjoying fresh, nutritious produce at its peak.
This means the produce is tasty, fresh, cheaper and better for the planet! It’s a win-win!!

This month we have chosen honey! 🍯 Bees are vital for pollinating crops. They pollinate one third of the food we eat. Buying local honey helps support your local bee keeper but also the local farmers around. Did you know the working bees are actually female. Go girls!

We are at the Mangrove Mountain Artisan market on 6th September 2026 from 9:00am-2:00pm. We will be selling local honey in our tea room. Come by and visit and support local 🐝✨🍯

Happy baking!! 👩🏼‍🍳

Did you know the 21st July is National Lamington Day! Below is our recipe.

**CWA of NSW Lamingtons**
90 g butter, softened
75 g (1/3 cup) caster sugar
2 eggs
110 g (3/4 cup) plain flour
1 teaspoon baking powder
Pinch of salt
1 tablespoon milk
1 1/2 tablespoons melted butter
Chocolate icing of thin spreading thickness (See recipe below)
Desiccated coconut, to decorate

Preheat oven to moderate (180 degrees C). Grease a 15 cm (6 in) square sandwich tin and line base with baking paper. Beat butter with wooden spoon first, adding in sugar. Then beat with an electric mixer until pale and creamy, add 2 eggs, one at a time, and add a little of measured flour if curdling.

Sift flour with baking powder and a little salt. Gradually add milk alternately with flour. Fold in the melted butter last. Pour into prepared tin. Bake for 30 minutes. This cake should come from the tin flat on top and needs very little trimming.

Cut when cold into 3 cm (1 1/4 in) pieces. Dip into chocolate icing* to coat lightly and then finish with coconut.

*Chocolate Icing: Cream together 85 g butter and 215g (1 3/4 cups) icing sugar. Mix together 1 tablespoon cocoa powder.
