Ingredients
* 5 Boneless Maryland chicken
* 2 tablespoons Garlic powder
* 2 tablespoon Smoked paprika
* 2.5 tablespoon Berbere spice
* 3 Onion chopped
* 1.5 tablespoon Vegeta
* 4-5 tablespoons Olive oil
* 2 cups water
Method
1. Preheat oven to 220°C.
2. In a tray or bowl, combine the boneless Maryland chicken with garlic powder, smoked paprika, berbere spice, onion, Vegeta, and olive oil. Mix well until the chicken is fully coated.
3. Place in the oven and cook at 220°C, flipping the chicken every 20 minutes until cooked through and nicely browned.
4. Halfway through cooking, add 2 cups of water to the tray to create a rich sauce.
Optional: add boiled eggs

Mix ½ a shredded continental cucumber with 6–7 generous tablespoons of Greek yoghurt and ½ tablespoon of Vegeta until smooth and creamy.

Easy Oven Baked Chicken

Ingredients
* 4 boneless Maryland chicken pieces
* 2 tablespoons garlic powder
* 2 tablespoons smoked paprika
* 1½ tablespoons Vegeta
* 4–5 tablespoons olive oil
* 2 cups water

Method
1. Preheat your oven to 220°C.
2. In a tray, combine the chicken with garlic powder, smoked paprika, Vegeta, and olive oil. Mix well until the chicken is fully coated.
3. Place the chicken in the oven and bake for 20 minutes.
4. Flip the chicken, and add 2 cups of water to the tray.
5. Continue flipping every 20 minutes, until the chicken is cooked through.
6. Spoon the sauce over the chicken before serving.

All-in-One Rice Pot
Ingredients:
* 500g chicken breast, chopped
* 1 onion, diced
* 2 canned tomatoes, blended with 2 tablespoons vegeta
* 1 cinnamon stick
* 10 cardamom pods
* 3 cups rice
* 1 capsicum, halved
* ~2 cups water
* Oil for cooking
Method:
1. Heat oil in a pot and sauté the onion until softened.
2. Add the chicken and cook until fully done.
3. Add the cinnamon stick and cardamom, then stir well.
4. Pour in the blended tomatoes and stir, then add the capsicum and stir. Cook for 5 minutes, stirring occasionally.
5. Add the rice and stir well. Pour in about 2 cups of water and stir again.
6. Cover with a lid, reduce heat to low, and cook for 10 minutes.
7. After 10 minutes, stir to ensure everything is well combined.
8. Cover again and cook for a further 10 minutes, then turn off the heat completely.

Odka Stew (Flour-Coated for Rich Gravy)
Ingredients:
* 500g odka meat (cubed)
* ½ cup flour (any type)
* 4 tablespoons smoked paprika
* 2 tablespoons Vegeta
Vegetables & Add-ins:
* 3 potatoes, chopped
* 1 onion, chopped
* 5 cloves garlic, chopped
* 1 capsicum, chopped
* Handful of coriander, chopped
Cooking:
* ½ cup oil (or less)
* 3 cups water (added gradually)
* 1 tablespoon oregano
* 1 teaspoon turmeric
Method:
1. In a bowl, combine the meat with flour, smoked paprika, and Vegeta. Mix well until fully coated.
2. Heat oil in a pot over medium heat.
3. Add the onion and cook until softened, then add the garlic and stir until fragrant.
4. Add the coated meat and cook, stirring, for about 2 minutes.
5. Stir in the coriander, then add the potatoes. Pour in 1 cup of water and stir.
6. Add the capsicum with another 1 cup of water and stir well.
7. Add oregano, then pour in the remaining 1 cup of water. Stir, then add turmeric and mix to combine.
8. Cover with a lid, reduce heat to low, and simmer until the potatoes are tender and the stew thickens into a rich gravy.
Turn off the heat and let it sit for a few minutes before serving.

Mandasi (East African Fried Dough)
Ingredients:
* 2 generous cups self-raising flour
* 4 tablespoons sugar
* ½ teaspoon yeast
* 4 teaspoons powdered milk
* ¼ cup oil
* 1 cup hot water
Method:
1. In a bowl, combine the flour, sugar, yeast, and powdered milk. Mix well.
2. Add the oil and hot water, then mix until a soft dough forms.
3. Knead the dough until smooth.
4. Cover and let it rest for a few hours.
5. Lightly dust the dough with flour on both sides, then roll it out.
6. Cut into squares or triangles by slicing straight down and across.
7. Heat oil in a pan over medium heat and fry until golden brown on both sides.

Canjeero (Somali savoury crepes)
Ingredients:
* 2 cups self-raising flour
* 2 teaspoons salt
* 4 teaspoons sugar
* 2 eggs
* 2 cups water
Method:
1. Add all ingredients to a blender and blend until smooth.
2. Cover the mixture and refrigerate for at least 4 hours, or overnight for best results.
3. Heat a non-stick pan over medium heat.
4. Pour one ladle of batter into the centre of the pan, then use the ladle to spread it in a spiral motion with light pressure.
5. Cover with a lid and cook until bubbles form and the surface develops light brown spots.
6. Remove the lid, then carefully take the canjeero out of the pan (no flipping needed).
7. Repeat with the remaining batter.
Serve warm and enjoy!

Cheesy Spiral Pasta
Ingredients
* 500g spiral pasta
* 600ml thickened cream
* 2 cups shredded cheese, plus extra for topping
* 2 tablespoons Moroccan spice
* 1 tablespoon garlic powder
* Handful of coriander, chopped
* 4 tomatoes, chopped
Method
1. Cook spiral pasta according to packet instructions. Drain and transfer to a baking tray.
2. In a saucepan, add the thickened cream and bring to a boil. Add 2 cups shredded cheese and stir until melted and smooth.
3. Add Moroccan spice, chopped coriander, and garlic powder. Stir well and let the sauce thicken slightly.
4. Pour the cheese sauce over the pasta and mix until well coated.
5. Top with chopped tomatoes and extra shredded cheese.
6. Bake at 180°C for 20minutes, or until the cheese is golden.
